Sliced, cubed or shredded, mozzarella is perfect for melting on pizzas, sandwiches and pasta dishes. Fresh mozzarella is often rolled into a ball and soaked in brine, offering a clean, milky flavor and soft, delicate texture that enhances salads, pastas and casseroles.


Like mozzarella, provolone is made by the pasta filata process, in which curds are heated in water or whey and then stretched and kneaded. It has a rich, mild flavor and features a smooth and creamy texture that works well for cooking.
